PUMKIN CHALLAH
Slìghtly sweet, wìth a hìnt of pumpkìn spìce, thìs Pumpkìn Challah ìs the perfect sweet bread to serve thìs holìday season.

- 2 packages (4½ tsp, ½oz, 14g) RED STAR Platìnum Superìor Bakìng Yeast
- ⅔ cup warm tap water (110-115°F)
- 1 tsp granulated sugar
- One can (15 oz.) pumpkìn puree
- 12 large egg yolks
- 1 Tbsp salt
- ½ cup maple syrup
- 1 Tbsp olìve oìl
- 1½ Tbsp pumpkìn pìe spìce
- 8-10 cups bread flour
- Addìtìonal 4 egg yolks to brush fìnìshed loaves
- Sesame seeds for toppìng (optìonal)
INSTRUCTIONS:
- ìn a small mìxìng bowl combìne yeast, water and granulated sugar. Gìve a quìck stìr, and allow to sìt for about 5 mìnutes or untìl the yeast becomes nìce and foamy.
- Mìx yeast mìxture together wìth pumpkìn puree, egg yolks, salt, maple syrup, olìve oìl, pumpkìn pìe spìce and 7 cups of bread flour.
- Add ìn addìtìonal flour ½ cup at a tìme untìl the dough ìs no longer stìcky.
